Roasted Bacon Wrapped Asparagus

Roasted Bacon Wrapped Asparagus

 

1 Bunch Fresh Asparagus

½ Pound Bacon Cut in Half

2 Tbsp. Olive Oil

Salt and Pepper to Taste

 

Cut bacon slices in half so that you end up with about 16 short slices.

Wash asparagus and trim down the woody stems about 1 inch.

Group two to three stems of asparagus together and wrap a bacon slice around the middle of the stems holding the bunch together. Lay wrapped asparagus bunches onto a parchment paper lined baking sheet.

Pour olive oil over asparagus and sprinkle with salt and pepper.

Bake in a 375 degree oven for 40 to 45 minutes.

Dick graduated from ERHS in 1976 before going on to the University of Tennessee at Chattanooga where he studied Political Science. Dick covered everything from prep sports to the whitewater events on the Ocoee River for the 1996 Olympics. When Chattanooga's two paper's merged, he became the Crime Reporter covering both the Chattanooga Police and Fire Departments. He was among reporters who were honored by the Associated Press for the TFP's coverage of the 2002 fog-shrouded crash on I-75 in Catoosa County, Dick and his wife, Cathy, live on Marlboro Avenue where they are seen frequently chasing around their three grandsons.
